Whole & Half Cow

We hand pick the finest calf to meet your beef needs.

Calves are hand selected at 26-30 months of age, scheduled for processing, and dry aged for 14-21 days.  The total cost of each bundle is based on the *hot carcass weight* of the animal at the processor. We can deliver your whole/half calf within 200 miles. Our customers can choose from a cut list that we will provide or they can arrange to have custom cuts made. After the dry aging period, the processor converts the half or whole beef into cuts, packages and labels the meat, and freezes it.  Our animals are typically harvested at 26-30 months of age and weigh about 1100-1200 lbs. The hanging carcass weight is typically about 50% of live weight. For 1150 lb. steer a hanging weight would be 575 lbs. Pet bones and organ meats are available at no extra charge.
